'Feta' & Jalapeño Breakfast Muffins

Perfect for those busy weeks when you just need something to grab and go that's still full of protein (27g per serve!). Lovely as is or serve with a dollop of ketchup. (For these meal prep recipes - the prep time is your Sunday night work and your cooking time is how long it takes to reheat things each day!)

I wasn’t sure if it was fan 180 or fan 160 so I put it on 160 and it took almost double the time! Also needs longer than 5 mins in oven to warm up for me :) Yummy though! Also missing peas on the method ingredient list part so accidentally missed them out.

What is the weight of the silken tofu block used for this recipe? Would love to make but the block sizes might be different here in Australia :)

Adore these little things! I mistakenly didn’t chop the jalapeños as you can see which I think would make them even better next time and help make them flavoured and textured throughout. But still these are so handy, so tasty and also a good base to go with where you want. I do mine with sriracha mayo (which is vegan!) and chilli’s and love it.

Can you use plain flour instead of rice flour?

Delicious - would make again. No notes other than they took a little longer to cook before they could be turned out.

The mix makes 15 muffins (in method) so it’s 3 muffins per serve 😌
