Mushroom Alfredo with Walnut Pangrattato

Silky, garlicky alfredo made with silken tofu, tossed with crispy roasted mushrooms and finished with a crunchy, super savoury crumb. Tonnes of goodness, but still feels so indulgent. If I can't easily find oyster mushrooms should I just double up on the other type?

Any ideas how to make a sauce without the tofu?! Could you do oat milk with beans or something? Thank you x

You could make a classic sauce with a vegan cream alternative along with the remaining sauce ingredients still and thicken up with a cornflour!
